  • 4 large tomatoes, sliced

  • 2 bell peppers, thinly sliced

  • Pour the sauce over the vegetables and cook for another 2-3 minutes until the sauce thickens.

  • 2 cups cooked rice (preferably cold)
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 2 green onions, chopped
  • Heat the vegetable oil in a large skillet or wok over medium heat.
  • Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.
  • In the same skillet, add the peas and carrots and stir-fry for 2-3 minutes.
  • Add the cooked rice and soy sauce. Stir-fry for another 3-4 minutes.

  • 1/2 cup store-bought pesto
  • 1/4 cup grated Parmesan cheese
  • Cherry tomatoes, halved (optional)
  • Salt and pepper to taste
  • Cook the pasta according to package instructions. Drain and return to the pot.
  • Add the pesto and toss to coat the pasta evenly.
  • Stir in Parmesan cheese and cherry tomatoes if using.
  • Season with salt and pepper to taste. Serve immediately.
